Brussels sprouts are not sprouts. Not even close.

The Latin gemmifera means bud-bearing. It shares a name with sprouts and nothing else: not the growing method, not the timeline, not the pathogen profile, not the FDA regulatory category. Brussels sprouts carry none of the germination-stage risk discussed below, and they are nearly always cooked anyway.
Same trap, different word: bean sprouts are real sprouts, alfalfa sprouts are real sprouts, and "sprouted grain bread" is made from real sprouts that were then baked, which is to say cooked, which is to say the risk was handled by the oven.
Are sprouts dangerous? The honest answer depends on who is eating them
For a healthy adult, raw sprouts are a small but real risk. For children, older adults, pregnant women and anyone immunocompromised, the FDA's guidance is not moderation, it is avoidance: do not eat raw or lightly cooked sprouts of any kind, including alfalfa, clover, radish, onion and mung bean.

Why sprouts are riskier than other raw produce
It is not carelessness. It is the process itself. Three things stack:
- The growing conditions are also ideal growing conditions for pathogens. Sprouts need warmth, moisture and time. So do Salmonella, E. coli O157:H7 and Listeria. You cannot give the seed what it needs without giving bacteria what they need.
- The contamination usually starts on the seed, not in your kitchen. Seed can pick up pathogens in the field, in storage or in transport, long before you open the bag. - There is no kill step. With most raw produce you can wash the outside. With sprouts, bacteria can end up internalized in the tissue as the seedling grows, so rinsing does not reliably remove them. And because raw sprouts are eaten raw by definition, nothing in the process applies heat.

Why older adults specifically
Two things change with age, and they compound. Immune response slows, so an infection that a 30-year-old clears in a day can put an 80-year-old in a hospital. And stomach acid production commonly drops with age or with the long-term acid-reducing medications many older adults take, which removes one of the body's first defenses against swallowed bacteria. The result is a lower infectious dose: it takes fewer organisms to make someone seriously ill.
Add the short shelf life. Sprouts keep 4 to 6 days under good conditions. In a household where produce sometimes sits until the weekend, a food with a 5-day ceiling and a bacterial growth curve is a poor fit. That is not a knock on anyone's kitchen habits. It is just an honest look at the margin for error, which for this one food is unusually thin.
So what should an older adult who loves the crunch actually do? Two good answers, and neither one is "give up fresh living greens":

The nutrition question does not have a single winner, and anyone who tells you it does is selling something. They lead in different columns.
Where sprouts win. Germination is a metabolic explosion, and some seed compounds spike hard in the first three days. Why microgreens are the safer choice for older adults
This is the part most comparisons skip, and it is not a marketing claim. It is a difference in what physically ends up on the plate.
The seed coat and the root are where contamination concentrates, and in a jar of sprouts they sit in the wettest, warmest part of the whole system. When you eat sprouts, you eat all of that. When you harvest microgreens, you cut the stem above the soil line with scissors and the seed hulls and the entire root mat stay behind in the tray and go to the compost. Pathogens that came in on the seed largely stay with the part you did not harvest.
Federal regulation recognizes this exact distinction. The FDA's sprout-specific requirements in Subpart M of the Produce Safety Rule apply to sprouts generally, but explicitly do not apply to sprouts grown in soil or a substrate and harvested above the soil line without their roots. That carve-out at 21 CFR 112.141 is, in effect, the government drawing the same line this section is drawing. Read that table honestly and the conclusion is not "sprouts bad." It is that sprouts are a fast, cheap, nutrient-dense food with one specific structural weakness, and that weakness lands hardest on exactly the people who can least afford it.
How to grow sprouts at home, step by step
Soak seed 4 to 12 hours depending on size, drain completely, then rinse and drain 2 to 3 times a day for 3 to 6 days, keeping the jar mouth-down at an angle so no water stands. Green leafy types under indirect light on the last day, drain until dry to the touch, and refrigerate immediately.
You need a wide-mouth quart mason jar, a mesh sprouting lid (or cheesecloth and a rubber band), and seed labeled for sprouting. Total cost, around fifteen dollars once.
1. Measure the seed, and use less than you think
One tablespoon of small salad seed (broccoli, alfalfa, radish, clover, cabbage, kale, mustard) per quart jar. About a quarter cup for larger beans and grains (mung, lentil, adzuki, pea, wheat). Small seed can expand to fill the entire jar, and an overpacked jar cannot drain, which is how batches fail.
2. Soak
Cover with two to three times the seed volume in cool water.
- Small brassica and salad seed: 4 to 8 hours
- Beans and large seed (mung, chickpea, adzuki, black bean): 8 to 12 hours
- Buckwheat: 15 to 30 minutes only, it goes slimy fast

3. Drain hard. This is the step people get wrong.

5. Green them, then harvest

How to grow sprouts safer, specifically
You cannot eliminate the seed-borne risk at home. You can reduce nearly everything else, and the difference between a careless jar and a disciplined one is real. In rough order of impact:
- Buy seed lots labeled and tested for sprouting. Not garden seed, not bulk bin food-grade beans. Sprouting seed suppliers test lots for pathogens. This is the single highest-leverage decision you make, because it addresses the risk at its actual source.
- Sanitize the hardware, every batch. Jar, lid, and the rack it drains on. Hot soapy water at minimum, a sanitizing rinse is better. A clean jar with a dirty lid is a dirty jar.
- Wash your hands before every rinse. You are handling the food eight to eighteen times before it reaches the plate.
- Never let water stand. Drain angle matters more than drain effort.
- Do not stretch the rinse interval. The gap between rinses is when the bacterial curve gets to run unopposed.
- Refrigerate promptly, dry. Cold slows everything. Moisture undoes it.
- Trust your senses and be ruthless. Slimy texture, sour or musty smell, or fuzzy mold means the whole batch goes in the compost. Do not rinse and rescue. Bean sprouts, specifically
When someone says "bean sprouts" they almost always mean mung bean: the thick, white, crunchy shoots in pad thai, pho and stir fries. They are one of the easiest sprouts to grow and one of the most satisfying, because the homegrown version tastes noticeably sweeter and crisper than the ones sitting in a store cooler.
